SHUICHI KOTANI

Shuichi Kotani is a highly respected Japanese noodle craftsman specializing in handmade soba, udon, and ramen noodles. Originally from Hyogo, Japan, he built his reputation through years of dedication to traditional noodle-making techniques combined with a scientific and modern approach to texture, hydration, and flavor balance.
After moving to New York, Kotani became known as the noodle supplier and consultant behind several acclaimed Japanese restaurants, including soba and ramen establishments throughout the city. He later opened his own soba restaurant, Uzuki, where he showcases artisanal soba made with carefully selected buckwheat and handcrafted techniques.
Kotani is also recognized internationally for teaching and consulting in the noodle industry, helping chefs and restaurant owners better understand noodle science, dough formulation, and authentic Japanese noodle culture. His philosophy focuses on precision, craftsmanship, and creating noodles that enhance the entire dining experience.
