Removing finished dough can be a physically demanding task, adding unnecessary strain and fatigue for your busy staff. That’s why we designed the Silky Mixer with a bottom-release lid, allowing the dough to drop directly into a mobile container cart—making transfer effortless and reducing physical workload.

At full capacity, the Silky Mixer can produce up to 35 kg of dough—an amount that can be difficult to lift all at once.
To ease the workload, we offer smaller dough containers designed for partial batches. By dividing the dough into four portions, each container holds a manageable amount—up to 9 kg—making it much easier and safer for staff to handle.

Dough Hydration

The equal distribution of liquid into flour in the dough maker determines the quality of Japanese noodle dough. As liquid is added to dry powders and mixed, it should be gradually distributed across all flour particles with care.

Our uniquely shaped mixer comes with an optimized number of blades that work together to render agitation granulation, which is an ideal state for optimal hydration.

This allows for better agitation of dough from the bottom of the mixer body, allowing more flour to get mixed and hydrated equally. The design of this mixer body renders an optimal degree of hydration for your dough.

1. OPTIMIZED WATER ADDITION

For high-quality ramen noodle production, even hydration of flour is essential to achieving the ideal dough consistency. To support this, our Japanese engineers redesigned the mixer lid with strategically positioned, smaller, and more widely spaced water-dripping holes.

This unique lid design slows down the addition of liquid, allowing for more uniform distribution throughout the flour—resulting in a perfectly hydrated dough every time.

2. EDGE-TO-EDGE MIXER BODY

After studying countless mixer designs, we found a common issue: dough often sticks to the edges of the mixer, leading to uneven hydration. To solve this, our Japanese engineers developed a noodle dough mixer with specially designed internal bumps that gently scrape the dough from the sides as it mixes.

This innovation ensures that all the dough is evenly blended, significantly reducing lumps and promoting consistent hydration throughout the batch.

Minimizing Physical Labor

To reduce physical strain during daily operations, our Japanese noodle dough maker features a low and wide ingredient inlet. Lifting heavy sacks of flour can be physically demanding, especially in a busy kitchen. This thoughtfully designed opening minimizes the amount of lifting required, making it easier and safer for staff to load ingredients.

Additionally, the large opening helps prevent flour from spilling during loading, keeping your workspace cleaner and more efficient.

Proximity Safety Sensors

Safety is our top priority across all our equipment designs. The Silky Mixer is equipped with two proximity sensors to ensure safe operation at all times.

To protect your staff, the mixer automatically stops when the top lid is open, preventing any operation while the machine is exposed. The bottom lid is also fitted with a proximity sensor to avoid potential hazards associated with rotating blades.

For added safety during dough removal, the mixer can operate with the bottom lid open—but only through a two-handed control system. This requires both hands to press two separate buttons simultaneously, ensuring intentional and secure activation of the blades.
