Special guest lecture announcement: Shinji Inoue of Bangkok’s “No Name Noodle” at June 2026 Yamato Ramen School
This June, participants of the Yamato Ramen School in Japan will have a rare opportunity to hear directly from one of the most talked-about Japanese ramen chefs currently active in Southeast Asia – Shinji Inoue.
Mr. Inoue will appear as a special guest lecturer during the course, where he will speak about his journey from the Japanese entertainment industry to becoming the owner-chef of Bangkok’s highly acclaimed reservation-only ramen shop No Name Noodle.
Mr. Inoue originally visited Bangkok while still working in Japanese entertainment and became inspired to open an authentic Japanese ramen restaurant after struggling to find the kind of ramen experience he envisioned. Rather than approaching the business casually, he chose to study ramen making and restaurant operations systematically at Yamato Noodle School before launching his own shop.

Today, his restaurant No Name Noodle has become one of Bangkok’s most sought-after ramen destinations, earning recognition from the Michelin Guide with a Bib Gourmand distinction. The Michelin Guide describes the restaurant as a small but highly popular shop serving signature ramen and Tsukemen built around complex recipes using more than 30 ingredients and fermented blends of shoyu for deep umami flavor.
His work has also attracted a devoted following online through the restaurant’s Instagram account, where visitors can see an uncompromising approach to ramen craftsmanship: meticulously prepared broths, refined plating, seasonal creations, premium ingredients, and a level of presentation more commonly associated with fine dining than traditional ramen shops. The restaurant’s limited seating and difficult reservation process have only added to its reputation among ramen enthusiasts in Thailand and internationally.
