The Yamato Automatic Foot Press Machine (AFP6) is a perfect standalone noodle making machine companion for the commercial production of noodles in your restaurant or commercial kitchen. Its design allows for the pressing of dough in a manner that emulates traditional Japanese methods used for Sanuki udon and Sano ramen.
Sanuki udon dough was traditionally pressed by foot, while Sano ramen was traditionally pressed under green bamboo—putting a lot of strain on the bodies of noodle masters. The AFP6 dough pressing machine is constructed to be able to emulate these methods automatically, eliminating this difficult labor and making noodles consistently just the way you want them.
The unique feature of green bamboo pressing is that it allows the dough to develop very robust gluten structures even in dough with a very high proportion of water to flour. These structures are referred to in Japanese as koshi, and can be roughly translated as “backbone” / “fiber.” This is what gives good noodles their pleasantly springy texture.
The AFP6 dough pressing machine features a multi-convex structure of pressing surfaces to imitate the bamboo shape, allowing it to make authentic Sano ramen noodles of superb quality and texture with very distinct “koshi”—oftentimes even surpassing handmade noodles!

With a see-through design adorned with LED lights, AFP6 can be put on an open display at your restaurant to the delight and entertainment of your customers. The machine features different lighting patterns for different modes of operation: blue for RUN and yellow for STANDBY. This is also helpful at-a-glance information for machine operators.
