FOOD BUSINESS with boiled eggspeeled by GoldenEgg
Sometimes emergence of new technologies, inventions or simply ingenious tools to perform common tasks in a more quick and efficient way can create whole new markets thus opening up novel business opportunities which had not existed before.
To make an example, it would not have made much sense to grow lots of fruit if you could not store, preserve or process them.
Or how would you be able to make enough noodles to supply a food business based on them without a noodle machine?
Now, think eggs.
Major — de Coverley from the famous “Catch 22” after being given a tasty boiled egg by his future mess hall officer told him that he had a “weakness for fresh eggs“.
AND WHO DOES NOT?!
Well, indeed. Eggs are tasty, nutritious, easily sourced, relatively cheap, culinary versatile – coming in many forms from fried and poached, to hard or soft boiled.
In short, eggs are a perfect choice for any food business – whether for dine-in or takeouts, and for fast-food or fine-dining establishments alike.
However, the economy of scale dictates that to make such enterprise profitable you would need lots of them, which also means that if you serve them boiled you would somehow need to peel them.
This may be a challenge even for relatively easy to peel hard boiled eggs, but might become an insurmountable obstacle if you aim to serve them soft-boiled – because there are no ways to automate the task of peeling such eggs… well, actually there is!
The epidemic that fell upon all of us in 2020 hit most food businesses to the extent of forcing many of them out of business altogether. This has also affected Yamato too making it urgently necessary for us to think out of the [noodle] box, and find ways how we could help our main customers – noodle shops survive through such hard times.
Aside from noodles, such businesses usually serve a lot of eggs on a daily basis. And this gave us a hint as to what we may focus our attention on – because the kind of eggs those restaurants serve is precisely of soft-boiled variety, which can be quite tricky to peel by hand thus limiting the amount of eggs a business can process and sell.
That is how it started – with the idea. With the idea to automate the task of peeling boiled eggs, INCLUDING soft-boiled ones.
Fast-forward through a relentless and painstaking process of trial and error which went hand in hand with a thorough and arduous research of properties and characteristics of eggs in general and boiled eggs in particular. And while it was a long and at times disheartening ordeal, we can definitely say that it was worth the effort because at the end Yamato has been able to develop a truly unique and revolutionary machine that is not only capable of performing the required task of peeling both soft and hard boiled eggs, but which is also compact, reliable, easy and safe to use, as well as has a processing capacity to outperform any human – both in terms of speed and peeling quality.
But then, to make use of the GoldenEgg, a food business does not even need to be a noodle specialty business.
Actually, it may even be an egg specialty business – because the GoldenEggs allows to peel up to 600 eggs per hour with very little engagement on part of the operator.
But there is a catch.
Well, not the “Catch 22” from the book quoted above, but still: the GoldenEgg works best with eggs of particular freshness and size, as well as those that were boiled in a proper way. And, while the first two issues can be dealt with by working closely with your suppliers, figuring out the remaining one may not be quite obvious, and may require following a certain set of procedures to make sure the eggs are prepared in a way that will make it easy for the machine to peel them.
