After graduating from Yamato Ramen School, Hattori Tatsuya started his own business in Nagoya in 2011 with his first Ramen Restaurant, MENYA HANZO (麺家 半蔵). After four successful years, he opened his fourth Ramen Restaurant in Nagoya in 2022

Join us on June 19th and 20th at our Houston Office for a special opportunity to meet a real Ramen Chef, Mr. Hattori. In this exclusive workshop, you’ll delve into the world of Ramen noodles, learning from Mr. Hattori’s wealth of experiences and stories accumulated over the years.

During the course, you’ll have the chance to immerse yourself in the art of Ramen making, crafting your own noodles under the guidance of Mr. Hattori himself. Take your creations home to experience the quality firsthand.

Throughout the workshop, Mr. Hattori will cover a wide range of topics, including different types of ingredients, optimal ingredient proportions, noodle making techniques, storage methods, shelf life considerations, culinary applications, and much more.

Mr. Hattori will demonstrate how to create a simple Ramen from scratch during our special event, using techniques learned at Yamato Ramen School and drawing from his own personal experience.

Mr. Rocky Fujii, founder and head of Yamato MFG, will appear at this special event to demonstrate some of the most unique ramen plating techniques and explain their importance in menu creation.

Attendees will have the opportunity to ask questions to one of the most influential figures in ramen noodle making from Japan.

CONTENTS OF THE WORKSHOP
FOCUSED ON RAMEN AND UDON

1. Class on Ramen noodles: Morning 10:00 AM to 1:00 PM

  • Explanation of recipes and ingredients (hard copy materials will be provided) 
  • Making a batch of Ramen noodles from scratch using the “RICHMEN GOLD 1” and “SILKY MIXER” commercial noodle making equipment 
  • Cooking and tasting freshly made Ramen noodles 
  • Q&A session

2. Special class with Mr.Hattori: Afternoon 2:00 PM to 4:00 PM

  • Greetings; self-introduction by Mr. Hattori
  • A talk by Mr. Hattori on his experience, and running a Ramen restaurant in Nagoya: centered on what one needs to know, have and be able to do to achieve success in Ramen business  

3. Special Ramen Plating Presentation with Mr. Fujii: Afternoon 4:00 PM to 5:00 PM
