His name is Ryuichi Ueno, and we are proud to have him as a special guest for our exclusive workshop scheduled for 10th and 11th of June, 2024.

Mr. Hattori will demonstrate how to create Ramen noodles and ramen dishes from scratch using techniques learned at Yamato Ramen School, and drawing from his own personal experience as a Ramen chef and a Ramen business owner.

By taking part in the workshop, you will have an opportunity to learn from a seasoned owner of four popular Ramen restaurants, gaining valuable insights to kickstart your own Ramen business or enhance your existing one.

Akira Mii has worked for Yamato for almost 20 years, supporting customers in many countries across the world. He can share his broad knowledge and deep expertise in noodle making and other aspects of noodle business.

1. Morning session

  • Greetings; self-introduction by Mr. Ryuchi Ueno 
  • A talk by Mr. Ueno on his experience of working at Yamato, and running a Ramen restaurant in Tokyo: centered on what one needs to know, have and be able to do to achieve success in Ramen business  
  • Making a batch of craft Ramen noodles from scratch on a Ramen machine for restaurants and small-mid scale production

2. Afternoon session

  • Cooking several Ramen dishes inspired by the most popular entries on the menu of “Chuka Soba Hirai”: concept, ingredients, cooking and plating techniques
  • Exploring and experiencing other relevant equipment (udon noodle making machines, automatic ramen egg peeling machine, gyoza skin making attachments etc.)   
  • Q&A session. Ramen industry: challenges and opportunities
