Online Noodle Class on Chicken Paitan Ramen

Long history, great diversity, and unlimited potential for further development, expansion and growth is what distinguishes Ramen, making it so easily accessible for the general public, and so ever interesting and satisfying to explore and experience for veteran Ramen connoisseurs alike.

In terms of Ramen cuisine taxonomy Chicken (“Tori”) Paitan falls under two distinct categories: 

1) a variety of ingredients used to make the base stock (in this case it is chicken (“tori” in Japanese) bones, fat and meat)

2) a level of the base stock concentration, which is usually divided by the degree of saturation into light (“chintan”) and thick (“paitan”) varieties

Thus, Chicken Paitan is a variety of Ramen made using (relatively) concentrated chicken stock. This name also implies that this is a type of Ramen dish where noodles are served in soup (i.e. not tsukemen or mazemen)
