After having been in ramen business for several years, and making ramen noodles by hand from scratch, YAMASAN RAMEN has reached a point in its history where further development and growth were impossible due to the sheer volume of noodles it served to customers at its various locations across Mexico.

Having reached that point, they began researching various options of how they could procure required volumes of noodles while at the same time ensure craft quality on par or even better than hand-made, and be in absolute control of ingredients.

At the end they have come to the only possible conclusion of acquiring their own equipment to produce noodles themselves.

Searching for a suitable equipment YAMASAN RAMEN has come across Yamato, got in touch, explored several options, and have ultimately opted for a combination of Richmen Type II noodle machine and a stand-alone dough mixer for 25 kg of flour per batch, which can produce up to 200 portions (@~150 g) of noodles per hour.
