After several years in the ramen business, making noodles by hand from scratch, YAMASAN RAMEN reached a turning point. The growing number of noodles served across its locations in Mexico made it increasingly difficult to continue relying solely on hand production while pursuing further development and growth.

At that stage, the team began researching different ways to secure the necessary noodle volumes while maintaining craft quality equal to—or even better than—handmade noodles, all while retaining full control over ingredients.

In the end, they arrived at the only viable solution: producing their own noodles by investing in professional equipment.

While searching for suitable equipment, YAMASAN RAMEN discovered Yamato and got in touch with our team. After exploring several options, they ultimately chose a combination of the Richmen Type II Noodle Machine and a stand-alone dough mixer capable of handling 25 kg of flour per batch. This setup allows them to produce up to 200 portions of noodles per hour (approximately 150 g per portion).
