RAMEN TO BíIRU (Copenhagen) – GOLDEN EGG USER

We reduced our egg peeling time by half with our GoldenEgg machine!

We started Ramen To Biiru in 2015 and as of 2022 now, running 6 locations in Copenhagen, in cities and airports and also a franchised shop in Malmo, Sweden. 

Our soft-boiled eggs are very popular as toppings. We use over 1,000 eggs on a daily average at all our shops. Preparing our eggs is very frequent and minimizing the prep time is very important in northern Europe where the labor cost is very high. When hand-peeling our eggs, it takes our fastest guy 90 minutes to peel 240 eggs on average. We decided to give the GoldenEgg machine a try. And it’s been only 2 weeks since we started using it. But we can peel 240 eggs now in 45 minutes. 

 
As it’s been a headache for us to shorten the time to prepare our eggs for a long time, how this machine performed was shocking. Considering the initial preparation and cleanup, making many eggs in one work-batch affects our costs. We also realized that we need to improve our cooking techniques for better performance. We want to explore and keep using the machine for shorter labor time.
 
We have also been using Yamato noodle machines for years. We cherish them as the production efficiency has improved as we use them. 
We have been facing daily challenges in northern Europe where the culture of ramen is relatively new, but the products Yamato manufactures have been our strong allies.
